🍬 Enjoy colorful, soft, and chewy Cadbury Mini Eggs Cookies that bring fun and festive flavors to your treat time.
πŸͺ This recipe combines the crunch of candy-coated chocolate eggs with a tender cookie base for a delightful texture contrast.

  • Total Time: 22 minutes
  • Yield: 24 cookies

Ingredients

– 1 Β½ cups (180 grams) all-purpose flour

– 1 teaspoon baking powder

– Β½ teaspoon baking soda

– Β½ teaspoon salt

– Β½ cup unsalted butter (softened)

– Β½ cup packed brown sugar

– β…“ cup granulated sugar

– 1 egg

– 1 teaspoon vanilla extract

– 1 cup of crushed mini candy-coated chocolate eggs (about 9 ounces)

– Β½ cup chocolate chips

Instructions

1-First, preheat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper or a silicone baking mat. This step helps the cookies bake evenly and makes cleanup a breeze.

2-Next, in a bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

3-In another bowl, cream the softened butter with the brown sugar and granulated sugar using a handheld mixer until it’s light and fluffy, which takes about 2 minutes.

4-Then, mix in the egg and vanilla extract until everything blends smoothly.

5-Graduallly add the flour mixture to this wet mix and stir until just incorporated, being careful not to overmix.

6-Gently fold in the crushed candy-coated chocolate eggs and chocolate chips to keep their shape and add that fun crunch.

7-Scoop the dough onto the prepared baking sheet, spacing the scoops about 2 inches apart.

8-Bake for around 12 minutes or until the cookies turn golden around the edges.

9-After baking, let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack.

10-Once cooled, they’re ready to enjoy, and you can store them for later as needed.
