125 grams good quality dark chocolate (70% cocoa recommended)

125 grams unsalted butter, chopped

125 grams sugar

3 large eggs, separated and at room temperature

Powdered sugar for dusting

Instructions

1-First, grease and line an 8-inch round cake tin with baking paper, then preheat your oven to 320Β°F (160Β°C) to ensure even baking.

2-If using whole blanched almonds, grind them to a fine, sandy texture for the best consistency.

3-Next, melt the dark chocolate in a bowl over simmering water, remove from heat, and stir in the chopped butter until it’s fully melted before adding the sugar and almond meal.

4-After cooling the mixture slightly, stir in the egg yolks and consider adding optional flavorings like rum, lemon zest, or coffee to enhance the aroma.

5-Whip the egg whites to soft, fluffy peaks and gently fold them into the batter for added lightness.

6-Pour the batter into the prepared pan, smooth the top, and bake for about 40 minutes until the top is dry and a skewer comes out with moist crumbs be careful not to overbake for that perfect moist texture.

7-Once baked, cool the torte completely in the pan before removing it, then dust with powdered sugar before serving.
