Instructions

1-First, cream the sugar and lemon zest together until they release a fragrant aroma, blending the citrus oils into the sugar.

2-Next, mix in the softened butter and lemon extract on low speed until fully combined for a creamy base.

3-Add the egg and egg yolk on low speed, then gently incorporate the dry ingredients flour, baking soda, cornstarch, and salt followed by the lemon juice to form the dough.

4-Divide the dough in half: mix one half with the muddled lemon black tea and add yellow food coloring to the other half for a fun twist.

5-Shape the dough by taking 2 tablespoons of each portion, squish them together, roll into balls, place on a baking sheet, and chill for one hour to maintain shape during baking.
