Ingredients

– 3 very ripe medium/large bananas

– ยฝ cup (8 tablespoons) unsalted butter, at room temperature

– ยพ cup sugar (can be substituted with honey)

– 2 large eggs, lightly beaten

– 1ยฝ cups all-purpose flour (can be substituted with organic whole wheat flour)

– 1 teaspoon baking soda

– ยฝ teaspoon salt

– ยฝ teaspoon vanilla extract

– 1 cup toasted walnuts, coarsely chopped (optional)

– ยฝ cup raisins (optional)

Instructions

1-Preheat oven to 350ยฐF: Grease and flour a loaf pan measuring approximately 9.25 x 5.25 x 2.75 inches.

2-Lightly roast walnuts in a pan, stirring to prevent burning, then chop and let them cool to room temperature.

3-In a mixing bowl, cream the softened butter and sugar (or honey) together.

4-Mash bananas to a chunky applesauce consistency and add to the batter along with the eggs; mix until combined.

5-In another bowl, whisk together the flour, baking soda, and salt, then incorporate into the banana mixture.

6-Stir in vanilla extract, toasted walnuts, and raisins if using. Pour the batter into the prepared loaf pan.

7-Bake at 350ยฐF for 55 to 60 minutes or until a toothpick inserted in the center comes out clean.

8-Allow the bread to rest for 10 minutes in the pan before transferring it to a wire rack to cool completely.
