– 3 very ripe medium to large bananas

– 2 large eggs, lightly beaten

– 1 ยฝ cups all-purpose flour (can be substituted with organic whole wheat flour)

– 1 teaspoon baking soda

– ยฝ teaspoon salt

– ยฝ teaspoon vanilla extract

– 1 cup walnuts, toasted and coarsely chopped (optional)

– ยฝ cup raisins (optional)

Instructions

1-Preheat the oven: Preheat the oven to 350ยฐF. Grease and flour a loaf pan measuring approximately 9.25 x 5.25 x 2.75 inches. Lightly roast walnuts on a skillet while stirring continuously, then chop and cool.

2-In a mixing bowl: cream together the softened butter and sugar (or honey).

3-Mash the bananas: with a fork until chunky applesauce consistency, then add to the batter along with the lightly beaten eggs, mixing until blended.

4-In a separate bowl: whisk together flour, baking soda, and salt. Add these dry ingredients to the wet mixture and combine.

5-Stir in: vanilla extract, walnuts, and raisins if using.

6-Pour the batter: into the prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

7-Allow the banana bread: to rest for 10 minutes in the pan before transferring it to a wire rack to cool completely.
