  • Total Time: 9 hours 15 minutes

Ingredients

– 4 cups unbleached all-purpose flour (500 g / 18 oz)

– 1 1/4 tablespoon instant dry yeast (9 g)

– 1/4 cup granulated sugar (50 g / 2 oz)

– 1/2 teaspoon salt

– 2 large eggs, at room temperature

– 3/4 cup cold water (180 ml / 6 fl oz)

– 3/4 cup unsalted butter, soft and cut into 1/2 inch pieces (170 g / 6 oz)

– 4 cups vegetable oil for frying

– 2 cups granulated sugar for coating (400 g / 14 oz)

– 1 cup whole milk (240 ml / 8 fl oz)

– 1/4 cup plus 2 teaspoons granulated sugar (60 g / 2 oz)

– 1 tablespoon flour

– 4 large egg yolks (72 g / 3 oz)

– 1 teaspoon vanilla extract

– 2 tablespoons unsalted butter (25 g / 1 oz)

– 1 1/2 cups heavy whipping cream (360 ml)

Instructions

1-Getting started with Bavarian cream donuts: begins with setting up your space and pulling together all the ingredients. Warm the milk to activate the yeast, which helps create a light and airy dough that’s fun to work with. Follow these steps closely for the best outcome, and don’t worry if you’re new this process is straightforward and rewarding.

2-In a mixing bowl, dissolve the active dry yeast in warm milk along with a bit of sugar, and let it sit until it turns foamy. This usually takes 5-10 minutes and ensures your dough will rise nicely. Next, in another bowl, mix flour, the rest of the sugar, and salt before adding the yeast mixture, eggs, melted butter, and vanilla extract to form the dough.

3-Knead the dough for about 8-10 minutes until it’s smooth and elastic, which builds its structure. For gluten-free versions, use a special flour blend and add something like xanthan gum to help it hold together. Let the dough rise in a warm spot for 1 to 1.5 hours until it doubles in size, then punch it down and roll it out to cut your donut shapes.

4-Heat oil to 350ยฐF and fry the donuts for 1-2 minutes per side until they’re golden brown. If you prefer a lighter option, try baking them instead. Once fried, drain the donuts and let them cool a bit before filling with the prepared Bavarian cream using a piping bag. Finish by dusting with sugar if you like, and enjoy them fresh for the ultimate treat.
