  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

1 ½ pounds sirloin tips, cut into 1-inch cubes with large fat pieces removed

3 tablespoons flour

1 teaspoon brown sugar

¼ teaspoon black pepper

½ teaspoon salt

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon chili powder

½ teaspoon paprika

¼ cup dry red wine (optional)

2 tablespoons butter

1 small diced yellow onion

3 minced garlic cloves

2 cups beef broth

1 beef bouillon cube

1 ½ teaspoons Worcestershire sauce

¼ teaspoon dried thyme

¼ teaspoon dried rosemary

1 teaspoon onion powder

½ teaspoon garlic powder

3 tablespoons cornstarch

¼ cup cold water

Instructions

1- Creating Beef Tips Gravy starts with simple steps that lead to a tasty result. First, combine the beef seasoning ingredients and prepare the gravy ingredients in advance to make cooking smoother. Coat the cubed sirloin tips with the seasoning mix and flour, then heat 3 tablespoons of olive oil in a skillet over medium-high heat.

2- Add the meat in batches to avoid overcrowding, browning each side for 30 to 45 seconds. If you’re using the optional dry red wine, deglaze the pan and let it reduce by half before moving on. Next, add 2 tablespoons of butter and the diced yellow onion, cooking until the onion softens, then stir in the 3 minced garlic cloves and cook for 1 minute.

3- Now, add the remaining gravy ingredients except for the cornstarch and cold water, including 2 cups beef broth, 1 beef bouillon cube, 1 ½ teaspoons Worcestershire sauce, ¼ teaspoon dried thyme, ¼ teaspoon dried rosemary, 1 teaspoon onion powder, and ½ teaspoon garlic powder, and bring the mixture to a boil. Gradually whisk in a slurry made from 3 tablespoons cornstarch and ¼ cup cold water until the gravy thickens as desired.

4-Cooking and Finishing Steps: Reduce the heat, return the browned beef and its juices to the pot, and cook partially covered for 10 to 15 minutes until the beef is fully cooked. For a smoother finish, stir in 1 tablespoon of cold butter before serving. The whole process takes about 40 minutes total, serving 4 people with sides like mashed potatoes.
