Ingredients
3 tablespoons oil
1 yellow onion, diced
3 carrots, chopped
8 bone-in beef short ribs
Salt and freshly ground black pepper, to taste
1/4 cup all-purpose flour
1 cup red wine
2 1/2 cups beef broth
2 tablespoons tomato paste
2 sprigs fresh thyme
2 sprigs fresh rosemary
Instructions
1-Preheat oven to 350ยฐF (175ยฐC).
2-In a large oven-safe pot with a lid, heat 1 tablespoon of oil over medium-high heat. Add diced onion and chopped carrots, cooking for a few minutes while stirring constantly. Remove vegetables to a plate.
3-Season short ribs with salt and pepper, then coat all sides with flour.
4-Add 2 more tablespoons of oil to the pot, increase heat to high, and sear the ribs on all sides until browned, about 45 seconds per side. Remove ribs to a plate.
5-Pour red wine into the pot to deglaze, scraping browned bits from the bottom. Boil for 2 minutes.
6-Add beef broth, salt, pepper, and tomato paste to the pot. Adjust seasoning to taste.
7-Return ribs, vegetables, thyme, and rosemary to the pot. Cover with lid.
8-Place the pot in the oven and cook at 350ยฐF for 2 hours, then reduce heat to 325ยฐF and cook for an additional 30 to 45 minutes until ribs are very tender and nearly falling off the bone.
9-Remove pot from oven, let rest covered for 20 minutes. Skim fat from the surface before serving.
10-Serve ribs over creamy mashed potatoes, spooning sauce from the pot.
