๐Ÿ— Chicken Broccoli Rice Casserole combines protein, vegetables, and comforting flavors for a nutritious and satisfying family meal.
๐Ÿฒ This easy-to-make casserole balances creamy textures with a crunchy topping, making it perfect for busy weeknights or meal prep.

  • Total Time: 1 hour
  • Yield: 6-8 servings

Ingredients

– 3 tablespoons butter

– 1 pound boneless skinless chicken breasts or 2 cups diced rotisserie chicken

– Salt and pepper to taste

– 1 teaspoon Italian seasoning

– 2 cups chicken broth

– 1 tablespoon olive oil

– 1 1/2 cups uncooked white long grain rice

– 3 cups fresh or frozen broccoli florets

– 1 can (10.5 ounces) condensed cream of chicken soup (or substitute with cream of broccoli, cheddar cheese, or broccoli cheese soup)

– 3/4 cup milk (any fat content)

– 1/2 cup sour cream or mayonnaise

– 2 cups shredded cheddar cheese, divided

– 1 cup crushed crackers mixed with 3 tablespoons melted butter for topping

– 1/2 teaspoon dried thyme (optional seasoning)

– 1/2 teaspoon garlic powder (optional seasoning)

Instructions

1-First Steps: Preheat your oven to 350ยฐF (175ยฐC) and measure out all ingredients like the 1 1/2 cups of uncooked rice and 3 cups of broccoli. If using frozen broccoli, thaw and pat it dry to keep the casserole from getting watery. This step sets you up for success, just like in our favorite quick meals.

2-Cook the Chicken and Aromatics: Melt 3 tablespoons of butter in a large pot over medium heat. Cut the chicken into bite-sized pieces, season with salt, pepper, and Italian seasoning, then cook until golden. Remove the chicken and in the same pot, add chicken broth, olive oil, and rice; bring to a boil.

3-Simmer and Add Vegetables: Reduce heat to simmer, cover, and cook the rice for 6 minutes. Stir in the broccoli, cover again, and cook for another 9 minutes until the rice is done. Let it stand covered for 10 minutes without stirring to absorb flavors.

4-Mix and Bake: Stir in the cooked chicken, condensed soup, 3/4 cup milk, 1/2 cup sour cream, optional seasonings, and half the cheddar cheese. Transfer to a greased 9 x 13-inch dish, top with the remaining cheese, and cover. Bake covered for 15 minutes, then add the cracker topping and bake uncovered for 10 more minutes until crunchy. The total time is about 1 hour, with 10 minutes prep and 50 minutes cooking.

5-Final Touches: Once out of the oven, let it rest before serving warm. For tips on restoring crispness, check our baking tips section. This method keeps the casserole creamy and full of flavor.
