– 8 large, thick boneless and skinless chicken breasts
– Chopped garlic to taste
– 1 cup shredded mozzarella cheese
– 1 cup shredded Parmesan cheese
– 2 cups Italian seasoned bread crumbs
– 1/2 cup melted butter (preferably salted)
– Sweet basil to taste for added flavor
Instructions
1-Butterfly the chicken breasts: Butterfly the chicken breasts and lay them flat for stuffing.
2-Stuff each breast: Stuff each breast with 1 cup shredded mozzarella cheese and 1 cup shredded Parmesan cheese. Add chopped garlic, to taste, inside each breast.
3-Sprinkle sweet basil: Sprinkle sweet basil, to taste, on top before closing the chicken and securing with toothpicks or short skewers.
4-Melt butter and roll chicken: Melt 1/2 cup butter in a flat dish and roll the stuffed chicken in the melted butter.
5-Roll chicken in bread crumbs: Then roll the chicken in 2 cups Italian seasoned bread crumbs.
6-Place coated chicken in baking dish: Place the coated chicken in a baking dish or pan. Pour any remaining melted butter over the chicken.
7-Bake chicken: Bake at 350 degrees Fahrenheit for about one hour. Remove all toothpicks or skewers before serving.
