  • Total Time: 58 minutes
  • Yield: 10 to 12 servings

Ingredients

– 1 pound (approximately 450 grams) Italian sausage cooked

– 1 yellow onion chopped and sautรฉed in sausage grease

– 7 eggs

– 1/2 cup (120 milliliters) milk

– 20 ounces (about 567 grams) frozen diced hash browns

– 8 ounces (around 225 grams) mild cheddar cheese grated (reserve about 1 cup/113 grams for topping)

– Salt and pepper to taste

Instructions

1-Preheat the oven: Preheat the oven to 350ยฐF (175ยฐC). Spray a 9ร—13-inch casserole dish with non-stick spray to keep everything from sticking.

2-Cook the sausage and sautรฉ onions: Next, cook the sausage and sautรฉ the chopped onion in the sausage grease for added flavor.

3-Mix ingredients: In a large bowl, mix together the 7 eggs, 1/2 cup milk, 20 ounces frozen diced hash browns, the cooked sausage and onions, 8 ounces grated mild cheddar cheese (keeping about 1 cup for topping), salt, and pepper. Pour this mixture into your prepared casserole dish and spread it out evenly.

4-Bake the casserole: Bake for 35 minutes, then remove from the oven, sprinkle the reserved cheese on top, and bake for an additional 8 minutes.

5-Rest and serve: Let the casserole rest for 15 to 20 minutes before serving to allow it to set properly. Cooking times might vary based on your potato type and moisture, so keep an eye on it for the best texture.
