2 large eggs, room temperature

1 cup (240 ml) whole or low-fat milk, room temperature

1/4 cup (60 g) sour cream or plain yogurt, room temperature

1/2 teaspoon almond extract, or vanilla extract as a substitute

2 cups (300 g) fresh cherries, pitted, coarsely chopped, and drained

Instructions

1-Preheat the oven: Preheat the oven to 400ยฐ F and line a muffin tin with paper liners to make cleanup simple.

2-Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well blended.

3-Mix wet ingredients: In a separate bowl, whisk the melted butter, sugar, and eggs until combined, then add the milk, sour cream, and almond extract, mixing until fully incorporated.

4-Combine and fold in cherries: Pour the wet ingredients into the dry ingredients and mix just until combined, being careful not to over-mix to keep the muffins light and fluffy. Fold in the chopped cherries by hand for even distribution.

5-Fill muffin cups: Fill the muffin cups about 3/4 full and sprinkle coarse sugar evenly on top for a nice crunch.

6-Bake and cool: Bake for 20 to 22 minutes, or until the muffin tops are golden and a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes before removing to cool completely.
