๐Ÿ— Cordon Bleu Chicken Meatloaf combines the classic flavors of ham and Swiss cheese with moist ground chicken for a comforting and elegant twist on meatloaf.
๐Ÿง€ This recipe offers a deliciously layered, cheesy center topped with a crispy breadcrumb crust, perfect for family dinners or special occasions.

  • Total Time: 50 minutes
  • Yield: 6 servings

Ingredients

– 2 pounds ground chicken

– 1 egg

– 1/4 cup plain bread crumbs

– 2 teaspoons minced onion

– 1 1/2 teaspoons garlic powder

– 1/2 teaspoon dried parsley

– 1 1/2 teaspoons salt

– 1/2 teaspoon ground black pepper

– 1/4 cup mayonnaise

– 6 slices ham

– 6 slices Swiss cheese

– 3/4 cup fresh or panko breadcrumbs for topping

– 3 tablespoons butter

– 3 tablespoons flour

– 1/4 cup heavy cream

– 1 cup skim or 1% milk

– 1 teaspoon Worcestershire sauce

– 1 tablespoon Dijon mustard

– 1/2 cup grated Parmesan cheese

– 1/4 teaspoon freshly grated nutmeg

– A pinch of salt and pepper to taste

Instructions

1-Start: Start by preheating your oven to 400 degrees Fahrenheit, which gives you a head start while you mix things up. This temperature helps lock in those juicy flavors without drying out the meat.

2-Mix Ingredients: In a large bowl, mix 2 pounds ground chicken with 1 egg, 1/4 cup mayonnaise, 1/4 cup plain bread crumbs, 2 teaspoons minced onion, 1 1/2 teaspoons garlic powder, 1/2 teaspoon dried parsley, 1 1/2 teaspoons salt, and 1/2 teaspoon ground black pepper until everything blends nicely. Spray a 9-inch x 5-inch loaf pan and spread half of this mixture evenly on the bottom for a solid base. Trust me, taking your time here makes all the difference.

3-Layer and Bake: Next, layer 3 slices of ham and 3 slices of Swiss cheese on top, then add another layer of the remaining 3 slices of ham and 3 slices of Swiss cheese. Cover it all with the rest of the chicken mixture to seal in those gooey goodies. Bake for 25 minutes, then sprinkle 3/4 cup fresh or panko breadcrumbs on top and bake for another 15 minutes, covering with foil if it browns too fast.

4-Prepare Gravy: For the gravy, melt 3 tablespoons butter in a saucepan over medium heat, whisk in 3 tablespoons flour, and cook for a minute. Slowly add 1/4 cup heavy cream, 1 cup skim or 1% milk, 1 teaspoon Worcestershire sauce, and 1 tablespoon Dijon mustard, simmering until it thickens. Stir in 1/2 cup grated Parmesan cheese and 1/4 teaspoon freshly grated nutmeg, then season with a pinch of salt and pepper. Let the meatloaf rest for 10 minutes before slicing and serving with the gravy.

Notes

๐Ÿ… Adding mayonnaise to the chicken mixture helps keep the meatloaf moist.
๐Ÿž Breadcrumb topping creates a crispy texture similar to classic fried chicken.
โ„๏ธ Prepare meatloaf ahead and reheat as needed; freeze uncooked loaf without topping, add topping before baking.
๐ŸŒก๏ธ Use a meat thermometer to ensure internal temperature reaches 165ยฐF.
๐Ÿงป Lining loaf pan with parchment paper eases removal and cleanup.
๐Ÿง‚ For lower sodium, opt for reduced-sodium ham and adjust salt accordingly.
๐Ÿง€ The creamy Dijon gravy enhances flavor but can be skipped or substituted.
