100g Copha

80g dark cooking chocolate (45% cocoa)

2 ยพ cups (110g) puffed rice cereal

ยฝ cup (40g) desiccated coconut

2 teaspoons cocoa powder

2 litres choc-mint ice cream

Instructions

1-Melt the Copha and dark chocolate in a heatproof bowl over simmering water, stirring until they combine smoothly. In a separate large bowl, mix the puffed rice cereal, desiccated coconut, and cocoa powder thoroughly.

2-Pour the melted mixture over the dry ingredients and stir well to coat everything evenly. Use 8.5 cm diameter egg rings on a lined tray to shape the mixture, spooning two flat tablespoons into each ring and pressing firmly to form discs. Repeat to make 16 discs in total, then freeze them for 15 minutes until firm.

3-Place the egg rings on another lined tray and spoon the softened choc-mint ice cream into each to create eight 4 cm thick patties. Smooth the tops carefully and freeze for 10 minutes until set.

4-To put it all together, sandwich each ice cream patty between two crackle discs. For the best results, freeze the assembled sandwiches for 1 hour, or serve right away if you’re in a rush. The total prep time is about 15 minutes, with an additional 10 minutes for cooking and 1 hour for chilling, yielding 8 servings that are perfect for sharing.
