Ingredients
– 2 cups all-purpose flour (240 g)
– 2 cups sugar (396 g)
– 3/4 cup unsweetened cocoa powder (63 g)
– 2 teaspoons baking powder (8 g)
– 1 1/2 teaspoons baking soda (9 g)
– 1 teaspoon kosher salt (use half if substituting finer salt types)
– 1 teaspoon espresso powder
– 1 cup milk or dairy-free alternative (almond, coconut, or buttermilk) (227 g)
– 1/2 cup vegetable oil, canola oil, or melted coconut oil (99 g)
– 2 large eggs, room temperature (100 g)
– 2 teaspoons vanilla extract (9.4 g)
– 1 cup boiling water (227 g)
Instructions
1-First, preheat your oven to 350Β°F (175Β°C). Grease and flour two 9-inch round cake pans or line them with parchment paper for easy removal.
2-In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk these dry ingredients thoroughly to ensure even distribution. Remember, espresso powder enhances the chocolate flavor, so donβt skip it.
3-Add eggs, milk, vegetable oil, and vanilla extract to the dry mixture. Beat on medium speed for 2 minutes until the batter is smooth and evenly blended. For vegan or other dietary adaptations, use the respective substitutes at this stage.
4-Carefully stir in the boiling water. The batter will be thin, which is normal; this step intensifies the chocolate flavor.
5-Pour the batter evenly into the prepared cake pans. Tap pans lightly to remove air bubbles.
6-Bake in the preheated oven for 30-35 minutes. Check the cake with a toothpick for doneness; it should come out clean.
7-Remove cakes from the oven and let them cool in the pans for 10 minutes. Then transfer to wire racks to cool completely before frosting. Once cooled, frost with your preferred option and serve your homemade chocolate cake.
