Instructions

1-In a medium bowl, whisk together flour and baking soda; set aside.

2-Beat butter with granulated and brown sugars on medium speed until light and fluffy.

3-Lower speed, then add salt, vanilla extract, and egg; mix until well combined.

4-Gradually add the flour mixture and mix until just combined.

5-Stir in oats and chocolate chips. Chill the dough for at least one hour or overnight.

6-Preheat the oven to 375ยฐF (190ยฐC).

7-Using a small ice cream scoop (about two tablespoons), drop heaping tablespoon-sized balls of dough two inches apart onto parchment-lined baking sheets.

8-Bake for 8 to 10 minutes until edges turn golden but centers remain soft.

9-Let cookies cool for 1 to 2 minutes on the baking sheet, then transfer to a wire rack to cool completely.
