Ingredients
– 1 (9 inch) deep dish pie shell (frozen, homemade, or refrigerated roll-out dough)
– 1 oz unsweetened baking chocolate (2 small squares)
– 7 tablespoons unsalted butter, divided
– 1/2 cup light corn syrup
– 1/2 cup dark corn syrup
– 3/4 cup granulated white sugar
– 3 eggs, beaten
– 1 cup chopped pecans
– 1 teaspoon vanilla extract
– 7 tablespoons unsalted butter for standard use
– 1 oz unsweetened baking chocolate (2 small squares) for standard use
– 1 cup chopped pecans for standard use
Instructions
1-Preheat the oven to 350 degrees Fahrenheit.
2-Prepare a double boiler by boiling water in a bottom saucepan. In the top saucepan or metal mixing bowl, melt 3 tablespoons of butter with the chocolate, stirring constantly until smooth. Remove from heat.
3-In another small saucepan, combine the remaining 4 tablespoons of butter, light and dark corn syrup, and sugar. Stir over low heat until the butter melts and ingredients blend.
4-Mix this syrup mixture into the melted chocolate. Stir in the beaten eggs and vanilla extract.
5-Place the chopped pecans evenly in the pie shell.
6-Pour the chocolate filling over the pecans, spreading evenly.
7-Cover the edges of the pie crust lightly with foil to prevent over-browning.
8-Bake the pie in the center of the oven for 45 to 50 minutes. The filling should be slightly jiggly with the top springing back lightly when tapped.
9-Cool completely on a wire rack before slicing. Optionally, serve with whipped cream.
