1 teaspoon vanilla extract

2 large eggs

1 Β½ cups all-purpose flour

1 teaspoon baking soda

Β½ teaspoon ground cinnamon

ΒΌ teaspoon salt

ΒΌ teaspoon baking powder

ΒΌ cup granulated sugar

1 tablespoon ground cinnamon

Instructions

1-Preheat oven to 350Β°F (177Β°C): Prepare an 8-inch loaf pan by lining it with nonstick foil and spraying with cooking spray.

2-In a large bowl, combine the grated zucchini, sugar, vegetable oil, vanilla, and eggs; mix well.

3-In a separate, smaller bowl, whisk together the flour, baking soda, cinnamon, salt, and baking powder.

4-Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

5-In another small bowl, whisk together the swirl ingredients: ΒΌ cup sugar and 1 tablespoon ground cinnamon.

6-Pour one-third of the batter into the prepared pan. Sprinkle half of the cinnamon-sugar mixture over the batter. Add another third of the batter, followed by the remaining cinnamon-sugar mixture. Top with the final third of batter.

7-Bake for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean.
