Instructions
1-First, mix the corn kernels, flour, sugar, baking powder, salt, and pepper in a large bowl until evenly combined.
2-Next, stir in the lightly beaten eggs and heavy cream to create a smooth batter that’s not too thick or runny.
3-Heat vegetable oil in a pan over medium-high heat, making sure it’s hot enough for frying.
4-Scoop 2 to 3 tablespoons of batter into the pan for each fritter, then flatten it into a circle with a spoon.
5-Cook for 2 to 3 minutes on one side until golden, then flip and cook for another 3 minutes until fully done.
6-Remove the fritters and drain them on paper towels, seasoning with a pinch of salt right away.
7-Repeat the process with the rest of the batter, adding more oil if needed, and serve warm garnished with sliced scallions.
