Ingredients

– 1 cup finely shredded cooked pulled pork

– 1 tablespoon olive oil

– ½ cup diced white onion (about half a medium onion)

– 1 seeded and diced jalapeño

– 3 teaspoons minced garlic (about 3 cloves)

– ½ cup drained black beans

– 1 10-ounce can of diced tomatoes with green chilies (drained)

– 2 lightly beaten eggs

– 3 cups cooked rice

– 1 tablespoon Worcestershire sauce

– 2 teaspoons cumin

– 2 teaspoons oregano

– 1 teaspoon paprika

– ½ teaspoon chili powder

– Salt and pepper to taste

Instructions

1-Gather and prepare all ingredients: Dice the onion, jalapeño, and garlic, and ensure the rice is cooked and cooled beforehand.

2-Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until it shimmers.

3-Sauté the onion, jalapeño, and garlic for about 2 minutes until fragrant and tender.

4-Add the pulled pork, black beans, and drained tomatoes, cooking until heated through, roughly 4-5 minutes.

5-Scramble the 2 lightly beaten eggs on one side of the skillet, then combine with the other ingredients.

6-Mix in the 3 cups of cooked rice and spices, stirring to coat everything evenly.

7-Cook for an additional 3-4 minutes until the rice browns slightly, then remove from heat and serve.
