Ingredients
– 4 boneless, skinless chicken breasts
– 1 cup salsa
– 1 cup drained canned diced tomatoes or one 10-ounce can diced tomatoes with green chilies, drained
– 1 ounce packet taco seasoning or 2 tablespoons homemade taco seasoning
– ยฝ onion, diced
Instructions
1-In a bowl, combine the salsa, drained canned tomatoes (or diced tomatoes with green chilies), and taco seasoning.
2-Place the diced onion and chicken breasts into the slow cooker.
3-Pour the tomato mixture over the chicken and onion.
4-Cover and cook on LOW for 7-8 hours or on HIGH for 3-4 hours.
5-Carefully remove the chicken from the slow cooker and shred it using two forks.
6-Return the shredded chicken to the slow cooker and stir well to coat it with the cooking juices.
7-Serve immediately in taco shells or use as desired.
