๐Ÿฝ๏ธ Crock Pot French Onion Meatloaf delivers tender, flavorful comfort with caramelized onions and creamy Swiss cheese, offering an effortless slow-cooked meal.
๐Ÿง… This recipe is perfect for family dinners, combining rich onion soup flavors with juicy ground beef for satisfying indulgence.

  • Total Time: 5 hours 15 minutes
  • Yield: 6-8 servings

Ingredients

– 1 tablespoon butter (salted or unsalted)

– 1 yellow onion, sliced (regular or sweet onion)

– 2 pounds lean ground beef

– 1 envelope beefy onion soup mix (low or no sodium can be used)

– 3/4 cup Italian bread crumbs (regular or Panko breadcrumbs are acceptable)

– 2 large eggs

– 3/4 cup milk

– 1 tablespoon Worcestershire sauce

– 8 slices Swiss cheese (divide use: 5 slices diced into loaf mixture, 3 slices for topping)

– 10.5 ounce can French onion soup (low or no sodium option available)

– Optional garnish: chopped parsley

Instructions

1-First, in a medium skillet over medium-high heat, melt the butter and add the sliced onion to caramelize for about 10 minutes, stirring occasionally and reducing heat if needed. This step builds the signature flavor that makes this recipe special. Next, place the caramelized onions at the bottom of a 5-6 quart slow cooker to create a flavorful base.

2-In a large bowl, combine the 2 pounds lean ground beef, 1 envelope beefy onion soup mix, 3/4 cup Italian bread crumbs, 2 large eggs, 3/4 cup milk, 1 tablespoon Worcestershire sauce, and 5 slices diced Swiss cheese. Mix until just combined and shape into a loaf with clean hands, then carefully place it on top of the onions.

3-Cooking and Finishing Steps: Pour the 10.5 ounce can of French onion soup over the meatloaf for added moisture and flavor. Cover and cook on low for 5-6 hours or on high for about 3 hours, until the internal temperature reaches 165 degrees Fahrenheit. In the last five minutes, add the remaining 3 slices of Swiss cheese on top and cover until melted.

4-Optionally, garnish with chopped parsley, slice the loaf, and serve with some of the juices from the slow cooker poured over for extra taste. This recipe takes about 15 minutes to prep and 4 to 6 hours to cook, making it ideal for a busy day.
