Ingredients

– 2 tablespoons lemon juice for dressing

– 1 teaspoon honey for dressing

– 1 medium honeydew melon, seeded and cut into bite-size cubes (about 5 cups) for crunch and hydration

– 1 cucumber, chopped for crunch and hydration

– 1/3 cup finely chopped red onion

– 3 tablespoons chopped fresh dill weed for freshness

– 1 cup crumbled feta cheese for creaminess

Instructions

1-Wash all produce thoroughly. Peel the cucumber and honeydew melon, then cut them into bite-sized pieces for even mixing.

2-In a medium bowl or jar, combine 2 tablespoons lemon juice, 1/4 cup extra-virgin olive oil, 1 teaspoon honey, 1/4 teaspoon salt, and 1/8 teaspoon ground black pepper. Whisk or shake until well mixed to create the dressing.
