Instructions

1-First, preheat the oven to 350Β° F (175Β° C) to get the right temperature for baking. Grease a 9-inch springform pan with coconut oil or ghee, and line the bottom with parchment paper if you want an extra layer of protection. In a large bowl, combine all dry ingredients except blueberries and stir them together until mixed.

2-Next, in a separate bowl, combine all wet ingredients to ensure they blend well. Pour the wet ingredients into the dry ones and mix with a hand mixer on medium-high speed for about 30 seconds until everything combines smoothly. Then, pour half the batter into the prepared pan and add Β½ cup blueberries on top.

3-Continue by pouring the remaining batter over the blueberries and topping with the rest of the blueberries for even distribution. Bake for 55-60 minutes, and check if it’s done by inserting a toothpick it should come out clean. Once baked, let the cake cool slightly before serving to keep it moist and flavorful.
