– 6 egg whites (≈ 180 ml)

– ½ avocado, peeled, pitted and diced (≈ 70 g)

– 2 tbsp chopped fresh cilantro (≈ 5 g)

– 2 tbsp crumbled cotija-style cheese (≈ 15 g) optional for garnish

– 6 egg whites for a high-protein, low-fat base

– 1 small jalapeño for authentic heat and Mexican flavor

– ½ cup grape tomatoes for freshness and natural sweetness

– ½ avocado for healthy fats and creamy texture

Instructions

1-Sauté the Vegetables: Heat the olive oil in a medium sauté pan over medium-high heat. Add the sliced jalapeño and diced onion; cook, stirring occasionally, for about 3 minutes. Stir in the minced garlic and halved tomatoes and continue cooking another 3 minutes. Season with salt and pepper, then transfer the vegetable mixture to a plate.

2-Cook the Egg Whites: Reduce the heat to medium. Pour the whisked egg whites into the same pan and let them set, gently stirring once, for 2 3 minutes until the bottom is lightly golden and the surface is mostly set.

3-Assemble the Omelet: Remove the pan from heat. Evenly distribute the sautéed vegetable mixture over the egg whites, then add the diced avocado, chopped cilantro, and crumbled cheese. Fold the omelet in half or gently fold the edges toward the center to encase the filling.

4-Serve and Enjoy: Slide the omelet onto a plate, garnish with extra cilantro and cheese if desired, and enjoy while warm.
