Instructions

1-First, sift the powdered sugar and almond flour together to remove any lumps and ensure a smooth batter. To prepare the macaron shells, whisk the egg whites and granulated sugar over simmering water until frothy, then beat them until stiff peaks form for that perfect airy texture.

2-Forming and Baking the Shells: Gently fold in the dry ingredients and food coloring to create a glossy batter, then pipe it onto trays in even circles. Dust lightly with cinnamon, let the shells dry until a skin forms, and bake at 300 degrees Fahrenheit for 18-20 minutes. For even cooking, rotate the trays halfway through and use an oven thermometer to keep things accurate.

3-Once baked, let the shells cool completely.
