1 (16-ounce or 450 ml) jar of mild tomato salsa (non-fruit flavored)

1 (12-ounce or 340 grams) bag of corn chips

1 (15-ounce or 425 grams) can of black beans, drained and rinsed

1 (8.5-ounce or 240 grams) can of corn, drained

1 small can of sliced black olives, drained

1.5 cups (about 170 grams) shredded Mexican cheese blend or cheddar cheese

1 Roma tomato, diced

1 small red onion, diced

1 jalapeno, thinly sliced

A handful of fresh cilantro

Sour cream for serving

Instructions

1-First, preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with aluminum foil, spraying it with nonstick cooking spray. This step helps everything bake evenly and prevents sticking, keeping your nachos crispy.

2-Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Brown the 1 pound of ground beef, then drain any excess liquid to avoid soggy results.

3-Stir in the 1 (1.25-ounce) package of mild taco seasoning and 1 (16-ounce) jar of mild tomato salsa until well combined with the beef. On the prepared baking sheet, spread the 1 (12-ounce) bag of corn chips in a single layer.

4-Evenly top the chips with the seasoned beef mixture, then add the 1 (15-ounce) can of black beans, 1 (8.5-ounce) can of corn, the small can of sliced black olives, and 1.5 cups of shredded Mexican cheese blend. Bake for 5-6 minutes until the cheese melts and becomes bubbly.
