Ingredients
1 tablespoon olive oil
1 pound (approximately 450 grams) ground beef or ground turkey as a substitute
1 (1.25-ounce or about 35 grams) package of mild taco seasoning (homemade or store-bought)
1 (16-ounce or 450 ml) jar of mild tomato salsa (non-fruit flavored)
1 (12-ounce or 340 grams) bag of corn chips
1 (15-ounce or 425 grams) can of black beans, drained and rinsed
1 (8.5-ounce or 240 grams) can of corn, drained
1 small can of sliced black olives, drained
1.5 cups (about 170 grams) shredded Mexican cheese blend or cheddar cheese
1 Roma tomato, diced
1 small red onion, diced
1 jalapeno, thinly sliced
A handful of fresh cilantro
Sour cream for serving
Instructions
1-First, preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with aluminum foil, spraying it with nonstick cooking spray. This step helps everything bake evenly and prevents sticking, keeping your nachos crispy.
2-Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Brown the 1 pound of ground beef, then drain any excess liquid to avoid soggy results.
3-Stir in the 1 (1.25-ounce) package of mild taco seasoning and 1 (16-ounce) jar of mild tomato salsa until well combined with the beef. On the prepared baking sheet, spread the 1 (12-ounce) bag of corn chips in a single layer.
4-Evenly top the chips with the seasoned beef mixture, then add the 1 (15-ounce) can of black beans, 1 (8.5-ounce) can of corn, the small can of sliced black olives, and 1.5 cups of shredded Mexican cheese blend. Bake for 5-6 minutes until the cheese melts and becomes bubbly.
5-Remove from the oven and garnish with 1 diced Roma tomato, 1 diced small red onion, 1 thinly sliced jalapeno, and a handful of fresh cilantro. Serve hot with sour cream on the side. For similar easy meals, try our chicken a la king recipe for another family favorite.

๐ฅ Avoid overbaking to prevent burning – keep a close eye on the nachos since they cook quickly under high heat
๐ถ๏ธ Adjust spice levels according to preference by using hot taco seasoning or adding extra jalapenos for more heat
๐ง For extra crispy chips, consider serving toppings separately or creating a double layer of chips to prevent sogginess
