Ingredients

– 2 cups small pasta such as mini farfalle, pastina, or orecchiette

– 4 large yellow onions, finely sliced

– 3 cups beef broth

– 1/4 cup white wine

– 1/2 cup heavy cream

– 1/2 cup grated Parmesan cheese

– 3 tablespoons unsalted butter

– 3 pressed garlic cloves

– 2 sprigs of fresh thyme or 1/2 teaspoon dried thyme

– Olive oil

Instructions

1-Start by heating olive oil with the unsalted butter in a large pan over medium-low heat.

2-Add the finely sliced yellow onions and cook for 35 to 40 minutes, stirring frequently, until they turn golden and caramelized.

3-Deglaze the pan by pouring in the white wine or some of the beef broth, then stir in the thyme leaves and stems along with the pressed garlic cloves, cooking until fragrant about 1-2 minutes.

4-Next, add the uncooked small pasta and the remaining beef broth, then bring to a simmer on medium-high heat for 15 to 20 minutes until the liquid is mostly absorbed.

5-Remove the thyme stems from the pan carefully.

6-Stir in the heavy cream and grated Parmesan cheese, cooking for a few more minutes until the sauce thickens and the cheese melts completely.

7-Finally, garnish with additional thyme and Parmesan cheese if desired, and serve hot. For a heartier meal, mix in optional proteins like chicken or mushrooms at this stage.
