Ingredients

– 4 large eggs

– 2/3 cup (160 ml) milk, preferably whole milk or any dairy-free alternative

– 1/4 cup (30 grams) flour added to create a thicker batter for extra fluffy toast

– 1/4 cup (50 grams) sugar

– 1/4 teaspoon salt

– 1 teaspoon cinnamon

– 1 teaspoon (5 ml) vanilla extract

– 8 thick slices of bread ideally thick sliced such as Texas Toast, slightly stale bread preferred; cinnamon bread or brioche can also be used

Instructions

1-Preheat a griddle to 350Β°F (175Β°C) or heat a skillet over medium heat to make sure it’s ready for cooking.

2-In a blender, combine 4 large eggs, 2/3 cup (160 ml) milk, 1/4 cup (30 grams) flour, 1/4 cup (50 grams) sugar, 1/4 teaspoon salt, 1 teaspoon cinnamon, and 1 teaspoon (5 ml) vanilla extract. Blend until smooth, or if mixing by hand, first stir the flour into the eggs before adding the rest and whisking well.

3-Dip each of the 8 thick slices of bread into the batter, making sure both sides get a good coating for that fluffy texture.

4-Cook the slices on the hot, greased griddle or skillet for a few minutes until the bottom turns golden brown, then flip and cook the other side the same way.

5-Remove from heat and serve warm, with options like syrup, fresh fruit, whipped cream, or powdered sugar on top for extra flavor.
