Instructions
1-First, cut the top and bottom off the watermelon and set those ends aside for later. Stand the watermelon upright and peel away the rind in strips until you’re left with just the red flesh. Shape it into a rough cake form by smoothing the sides and top to get that cake-like look.
2-Next, in a large bowl, beat the heavy whipping cream on high speed until it starts to thicken. Add the sugar one tablespoon at a time, then mix in the vanilla bean seeds until the cream is thick and easy to spread. Place the shaped watermelon on a plate or cake stand and pat it dry with paper towels to avoid any moisture problems.
3-Now, spread the whipped cream evenly over the watermelon’s surface to cover it nicely. Use a melon baller to scoop round pieces from the reserved ends and arrange them on top for decoration. Finish with mint sprigs if you like, then pop it in the fridge until you’re ready to serve.
