Ingredients

– 2 sirloin steaks, about 2 lbs (approximately 900 grams) total, 1.5 inches (around 3.8 cm) thick

– 2 teaspoons kosher salt for seasoning the steaks

– 1 teaspoon freshly ground black pepper

– Additional garlic butter for cooking and serving, totaling 6 tablespoons

Instructions

1-Prepare garlic butter by mixing the softened butter with minced garlic, chopped parsley, lemon zest, and 1 teaspoon kosher salt. Stir thoroughly and shape into a log or store in a container in the refrigerator.

2-Remove steaks from the refrigerator 30 to 45 minutes prior to cooking to bring to room temperature.

3-Heat a cast iron skillet over high heat until very hot.

4-Season steaks on all sides with 2 teaspoons kosher salt and 1 teaspoon black pepper.

5-Place steaks in the dry, hot skillet without overcrowding. Sear for 4 minutes on one side.

6-Flip steaks and sear the other side for 2 minutes.

7-If the steak has a fat cap, sear the edges for a few minutes until caramelized.

8-Reduce heat to medium and add 2 tablespoons of garlic butter per steak. Baste steaks with the melted butter for 2 to 3 minutes until they reach your desired internal temperature.

9-Remove steaks from the skillet and let rest under foil for 10 to 15 minutes.

10-Serve with an additional tablespoon of garlic butter on top, accompanied by your preferred side dishes.
