Ingredients

– 4 boneless, skinless chicken breasts [pounded to even thickness and brined]

– 1 quart (approximately 950 ml) warm water

– 1/4 cup (approximately 60 g) kosher salt [for the brine]

– 1 Tbsp melted butter or olive oil [for brushing]

– 2 tsp ground ginger

– 1 tsp garlic powder

– 1/2 tsp freshly cracked black pepper

– 1/2 tsp salt

– 1/2 tsp paprika

– 2 medium peaches [pitted and diced]

– 1 jalapeño [cored and finely chopped]

– 1/2 cup (approximately 30 g) finely chopped fresh cilantro

– 1/3 cup (approximately 45 g) finely chopped red bell pepper

– 1/3 cup (approximately 45 g) finely chopped red onion

– juice and zest of 1 lime

– a generous pinch of ground ginger

– kosher salt [to taste]

Instructions

1-Start by preparing all your ingredients: dice the peaches, chop the red bell pepper and onion, grate the ginger, and chop the cilantro. This step, called mise en place, keeps everything fresh and organized.

2-Next, heat a non-stick skillet over medium-high heat and lightly oil it; add the chicken breasts seasoned with salt and pepper, and cook for 5-6 minutes per side until they reach an internal temperature of 165°F (75°C). If you’re going vegan, cook tofu or tempeh in the same way for that protein base.

3-Once the chicken is done, remove it from the skillet and let it rest. In the same skillet, sauté the red onion and red bell pepper until softened, about 3-4 minutes it’s like giving them a quick flavor boost! Now, combine the cooked chicken with the sautéed veggies in a bowl, then add the diced peaches, grated ginger, lime juice, and chopped cilantro. Toss everything gently to mix the flavors, and adjust seasoning with salt and pepper as needed. Finally, serve it right away over rice or salad, or chill it for a refreshing twist perfect for meal prep too!
