– 1 1/2 to 2 cups powdered sugar
– 3 tablespoons of milk
– 1/2 teaspoon vanilla bean powder or vanilla extract
– A pinch of cinnamon
– A pinch of salt
Instructions
1-First, preheat the oven and prepare your baking sheets as mentioned.
2-Beat the butter, sugar, espresso, and vanilla until fluffy.
3-Add the egg and molasses, blending thoroughly.
4-Mix the dry ingredients into the wet ones until combined.
5-For drop cookies, roll dough into tablespoon-sized balls; add extra flour if sticky, roll in granulated sugar, and place 2 inches apart on sheets. Bake 8 to 10 minutes until edges set.
6-For cutout cookies, divide dough, roll to 1/4 inch thickness on floured parchment, cut shapes, freeze for 15 minutes, then bake 8 to 10 minutes until just set.
7-Allow cookies to cool on the pan before icing.
To prepare the icing, brown the butter in a saucepan over medium heat for 2 to 3 minutes until it smells toasted, then cool for 5 minutes. Whisk in powdered sugar, milk, vanilla, cinnamon, and salt until smooth, and spread it quickly on the cookies.
