๐Ÿ Pear Gingerbread Muffins combine warm, cozy spices with sweet, juicy pears for a deliciously moist and flavorful treat.
๐ŸŒฟ Made with whole wheat flour and packed with antioxidants and fiber from pears, these muffins offer both taste and nourishment.

  • Total Time: 30-35 minutes
  • Yield: 18 muffins 1x

Ingredients

Scale

1 cup whole wheat flour

1 1/2 cups all-purpose flour

2/3 cup brown sugar

2 teaspoons baking powder

1 1/2 teaspoons baking soda

1/4 teaspoon salt

4 teaspoons gingerbread spice (blend of cinnamon, ginger, nutmeg, allspice, cloves)

2 eggs, beaten

1 cup molasses (fancy molasses preferred; blackstrap can be used for stronger flavor)

3/4 cup water

1/2 cup oil (olive oil, avocado oil, or neutral vegetable oil)

2 cups diced peeled pear (Bartlett suggested, others work)

Instructions

1-Preheating: Begin by preheating your oven to 350ยฐF (175ยฐC) and lining muffin tins with paper liners for even baking. This preparation takes about 10 minutes, setting the stage for a quick bake time of 20-25 minutes, making the total time around 30-35 minutes.

2-Mixing dry ingredients: In a large bowl, whisk together the whole wheat flour, all-purpose flour, brown sugar, baking powder, baking soda, salt, and gingerbread spice until evenly blended.

3-Mixing wet ingredients: In a separate bowl, whisk the eggs, molasses, water, and oil to create the wet mixture.

4-Combining wet and dry: Pour the wet ingredients into the dry ones and stir until just combined, then gently fold in the diced pears to add moisture and flavor bursts.

5-Filling and baking: Divide the batter evenly among the muffin cups, filling each about 3/4 full, and if you like, top each with a thin slice of pear for extra appeal. Bake for 20-25 minutes, or until a toothpick comes out clean, then cool on a wire rack. These steps yield approximately 18 muffins, and remember, the dense, low-rising texture is normal due to the batter’s consistency.

Notes

๐Ÿง‚ Gingerbread spice can be pre-made or homemade using cinnamon, ginger, nutmeg, allspice, and cloves.
๐Ÿ Bartlett pears are preferred for their sweetness, but other varieties can be used or omitted.
๐Ÿž Expect a denser, lower-rising muffin due to the wet batter consistency; this is normal.
