– 1 cup sliced or slivered almonds
– 2/3 cup large coconut flakes (or 1/2 cup shredded coconut, or omit if preferred)
– 1/2 cup chopped pecans
– 1/2 cup sunflower seeds
Instructions
1-Preheat oven: Preheat oven to 300ยฐF (150ยฐC) and line an 18 x 13 inch baking sheet with parchment paper.
2-Warm ingredients: In a small saucepan, warm the maple syrup, coconut oil, sea salt, cinnamon, and vanilla extract over medium heat for about 4-5 minutes until the coconut oil is melted, but do not let it simmer. Whisk to combine and remove from heat.
3-Combine dry ingredients: In a large bowl, combine the oats, almonds, coconut flakes, pecans, and sunflower seeds. Pour the warmed maple syrup mixture over the dry ingredients and gently toss until evenly mixed.
4-Spread granola: Spread the granola evenly on the lined baking sheet and press down gently with a spatula to compact it.
5-Bake granola: Bake for 25 minutes, then rotate the pan 180 degrees without stirring and bake for an additional 15-20 minutes until the granola is lightly golden on top.
6-Cool granola: Transfer the baking sheet to a wire rack and let the granola cool completely to allow it to harden.
