Ingredients

– 5 corn tortillas

– 1 ripe but firm avocado

– Salt and pepper (to taste)

– Olive oil for brushing

– Queso fresco cheese, crumbled (can substitute cotija cheese)

– 1 lime, cut in wedges

– Pickled red onions (optional for topping)

– 1/3 cup crema or sour cream

– 1/4 cup mayo

– Juice of 1/2 lime

– 3/4 teaspoon chili powder

– 1/4 to 1/2 teaspoon smoked paprika

Instructions

1-Preheat your grill or grill pan: to medium-high heat, around 400ยฐF or 200ยฐC, to get those perfect grill marks.

2-Slice the avocado: Slice the 1 ripe but firm avocado in half, remove the pit while keeping it in the skin, and brush the halves with olive oil before sprinkling with salt and pepper.

3-Grill the avocado: Place the avocado halves flesh-side down on the grill and cook for 2 to 5 minutes until grill marks show, then flip for even grilling.

4-Grill the corn tortillas: Grill the 5 corn tortillas for a few seconds on each side until they puff up slightly and get those tasty marks.

5-Cool and slice the avocado: Once done, let the avocado cool a bit, then slice it inside the skin and scoop out the pieces carefully.

6-Assemble your tacos: Layer the avocado slices in the warm tortillas, adding crumbled queso fresco cheese, pickled red onions if you like, and a drizzle of the homemade lime crema made from whisking 1/3 cup crema or sour cream, 1/4 cup mayo, juice of 1/2 lime, 3/4 teaspoon chili powder, and 1/4 to 1/2 teaspoon smoked paprika.

7-Finish and serve: Finish with fresh lime juice from the 1 lime cut in wedges, and serve right away for the best taste.
