Ingredients

– 2 medium shallots, very thinly sliced

– 2 small jalapeño peppers, thinly sliced into rounds (use 1 pepper for moderate heat; remove seeds for mild heat)

– 3 ½ tablespoons lime juice, plus more for serving

– 2 tablespoons extra virgin olive oil, plus more for grilling

– ½ teaspoon ground cumin

– Kosher salt or sea salt to taste

– Freshly cracked black pepper to taste

– 6 medium or 4 large ears of corn, husked

– 1 pint (about 300g) cherry tomatoes

– 1 (15-ounce/425g) can pinto beans or black beans, drained and rinsed

– ½ to ¾ cup (6-9g) cilantro leaves and tender stems, finely chopped

– 1 large ripe avocado, diced or torn into chunks

Instructions

1-Mix the shallots, jalapeños, lime juice, olive oil, cumin, salt, and pepper in a bowl and let it marinate for 20 minutes to develop bold flavors.

2-Heat a grill pan on high, brush the corn with olive oil, and grill for 10-12 minutes, turning occasionally until charred for that smoky touch.

3-Toss the cherry tomatoes with olive oil, salt, and pepper, then grill for 3-5 minutes until they are charred and wrinkly, adding depth to the salad.

4-Once cool, shave the kernels from the corn into a large bowl to keep things neat and ready for mixing.

5-Add the grilled tomatoes, marinated shallots and jalapeños with their liquid, pinto beans, and cilantro to the bowl and toss to combine everything nicely.

6-Gently fold in the avocado, then adjust the seasoning with lime juice, salt, and pepper as needed for the best taste.
