Ingredients

– 4 avocados, sliced in half

– ½ red onion

– 2 jalapeno peppers

– ½ cup fresh cilantro

– 2 limes

– ½ teaspoon salt

– ½ teaspoon freshly cracked black pepper

– ¼ cup crumbled cotija cheese

– Olive oil for brushing or spritzing

Instructions

1-Preheat your grill: Preheat your grill to medium-high heat for at least 15 minutes to get it nice and hot.

2-Brush or spritz: Brush or spritz the avocado halves, red onion, and jalapenos with olive oil so they don’t stick.

3-Place the avocados: Place the avocados, onion, and jalapenos on the grill with the cut sides facing down for even charring.

4-Grill the avocados, onion, and limes: Grill the avocados, onion, and limes for 8 to 10 minutes until grill marks show up, and turn the jalapenos often until their skins are charred.

5-Take everything off the grill: Take everything off the grill and let it cool down a bit before handling.

6-Scoop out the avocado flesh: Scoop out the avocado flesh and chop it up, then peel and seed the jalapenos before dicing them.

7-Dice the onion: Dice the onion and use about 3 tablespoons in the mix, saving the rest for later.

8-In a large bowl: In a large bowl, combine the chopped avocado, diced onion, diced jalapenos, ½ cup fresh cilantro, the juice from the 2 grilled limes, ½ teaspoon salt, and ½ teaspoon black pepper.

9-Mash it all with a fork: Mash it all with a fork until it’s as chunky or smooth as you like, then stir in ¼ cup crumbled cotija cheese, saving some for the top.

10-Serve it right away: Serve it right away with your favorite chips or as a topping for other dishes.
