4 small zucchini, sliced into ΒΌ inch thick rounds

Olive oil for brushing the zucchini chips

Salt and pepper to taste

1 cup shredded cheddar cheese

1 (15 oz) can black beans, rinsed and drained

2 small tomatoes, chopped

1 large avocado, chopped (seed removed)

2 green onions, chopped

ΒΌ cup chopped cilantro

1 lime

Instructions

1-First, toss the sliced zucchini with olive oil, salt, and pepper.

2-Grill over medium heat for 4 to 5 minutes until tender.

3-Sprinkle 1 cup of shredded cheddar cheese over the zucchini and grill for about 1 minute until it melts.

4-Remove from the grill and place on a serving plate.

5-Top with the 1 (15 oz) can of black beans (rinsed and drained), 2 chopped small tomatoes, 1 chopped large avocado, 2 chopped green onions, ΒΌ cup chopped cilantro, and juice from 1 lime.

6-Serve immediately for fresh enjoyment.
