Instructions

1-First, make the sauce by combining soy sauce and sugar in a saucepan. Bring it to a boil and simmer for 2-3 minutes until it thickens slightly, then stir in garlic, green onion, sesame oil, chili flakes, and white pepper for another minute. This creates the flavorful base that defines Hawaiian garlic fried chicken.

2-Marinating and Coating Steps: Next, marinate the chicken: Mix the cubed chicken with 4-5 tablespoons of the garlic sauce, 1 tablespoon cornstarch, and 1 tablespoon vegetable oil. Let it sit for 20-30 minutes or overnight for deeper flavor. For the dry coating, whisk together flour, cornstarch, salt, and 3 tablespoons of garlic sauce to form clumps that add extra crunch.
