  • Total Time: 1 hour 40 minutes
  • Yield: 6-8 servings

Ingredients

– 2 teaspoons dried yeast

– 1 cup lukewarm water

– 400g plain flour

– 2 teaspoons salt

– 3 tablespoons olive oil

– 200g pizza cheese

– 150g finely diced ham

– โ…“ cup drained canned pineapple chunks

– 1 tablespoon pizza sauce

Instructions

1-First, mix 2 teaspoons dried yeast with 1 cup lukewarm water and let it sit until bubbles form. In a large bowl, combine 400g plain flour and 2 teaspoons salt, then add the yeast mixture and 3 tablespoons olive oil. Mix until smooth and knead on a floured surface before letting it rise.

2-Preheat your oven to 200ยฐC (180ยฐC fan-forced). After the dough rises, gently knead and roll it into a 20 cm disc, incorporating 1 cup of pizza cheese, half the ham, and half the pineapple. Divide the dough, roll into logs, cut into pieces, and form balls arranged in a spiral on a lined tray.

3-Let the balls rise again, then brush with 1 tablespoon pizza sauce and add the remaining ham and pineapple. Bake for 15 minutes, add the rest of the cheese, and bake for another 10 minutes. The whole process takes about 15 minutes of prep plus proving time, with 15 minutes cooking, serving 6 to 8 people.

4-Cut the biscuit dough into bite-sized pieces and coat them.

5-Layer the pieces with ham and pineapple in the pan.

6-Bake until golden and let cool before serving.

Notes

๐ŸงŠ The remaining dough can be frozen for up to two months and defrosted overnight in the refrigerator for future use
๐Ÿ Use fresh pineapple instead of canned for a brighter, more intense tropical flavor and natural sweetness
๐Ÿง€ For extra cheesy goodness, mix some grated Parmesan into the dough before rolling for added depth of flavor
