  • Total Time: 2 hours 40 minutes
  • Yield: About 20-24 macarons 1x

Ingredients

Scale

100 grams egg whites (3.5 oz)

100 grams granulated sugar (3.5 oz)

105 grams almond flour (3.7 oz)

105 grams powdered sugar (3.7 oz)

Food coloring (optional, yellow with a tiny smidge of black used)

2 tablespoons unsalted butter softened (28 grams, 1 oz)

1/4 cup cream cheese softened (56 grams, 2 oz)

2 tablespoons honey (30 ml)

1 1/2 cups powdered sugar (187 grams, 6.5 oz)

2 oz white chocolate (56 grams)

3 tablespoons bee pollen

Instructions

1-Let’s dive into the fun part making your honey macarons! Start by getting your workspace ready, which means sifting the almond flour and powdered sugar together for that smooth texture everyone loves. This step helps avoid lumps and ensures your shells turn out just right. Once that’s done, you’ll whip the egg whites until they’re foamy and then add the granulated sugar little by little to form those stiff peaks.

2-Next, gently fold in the sifted dry ingredients along with the honey to mix in that delicious flavor. Be careful not to overdo it fold in a letter J pattern until the batter is thick and glossy. Then, pipe the batter onto your lined baking sheets, using a template if you have one, and let it rest to build that important skin. Preheat your oven to 300°F and bake for 15 to 20 minutes, rotating the trays every 5 minutes for even results.

3-After baking, let the shells cool completely before adding the frosting. For the honey cream cheese frosting, beat the butter and cream cheese until fluffy, then mix in the honey and powdered sugar until creamy. Finally, pipe the frosting onto half the shells and top with the rest. If you want to add flair, drizzle on some melted white chocolate and sprinkle bee pollen.
