Ingredients
– 1 cup plus 2 tablespoons oats divided Adds fiber and texture
– 1 β cups white whole wheat flour Provides whole grain nutrition
– ΒΌ cup plus 1 tablespoon honey divided Natural sweetener and moisture
– 1 cup all-purpose flour
– 2 ΒΌ teaspoons baking powder
– ΒΌ teaspoon baking soda
– 1 ΒΌ teaspoons salt
– 1 scant cup plain yogurt
– 1 large egg
– ΒΌ cup canola or vegetable oil
– ΒΎ cup milk
Instructions
1-First, preheat your oven to 375Β°F (190Β°C) and grease a 9Γ5 inch loaf pan. Sprinkle 1 tablespoon of the oats inside to coat the sides and bottom, setting the stage for easy removal later.
2-In a large bowl, whisk together the white whole wheat flour, all-purpose flour, baking powder, baking soda, and salt. This ensures everything mixes evenly for that quick oat bread recipe without kneading.
3-In another bowl, beat 1 cup oats, yogurt, egg, oil, and ΒΌ cup honey until blended, then stir in the milk. Gently fold this into the dry ingredients until just combined overmixing can make the bread tough.
4-Pour the batter into the prepared pan and spread it evenly. Bake in the center of the oven for 30-45 minutes, checking at 30 minutes until a toothpick comes out clean.
5-Once done, remove from the oven, brush with the remaining 1 tablespoon honey, and sprinkle with the remaining 2 tablespoons oats. Let it cool slightly before serving warm. Total time is about 1 hour, with 20 minutes prep and 40 minutes cooking.
