  • Total Time: 1 hour

Ingredients

– 1 cup softened butter

– 1 cup sugar

– 2/3 cup brown sugar

– 2 large eggs

– 1 teaspoon vanilla extract

– 3 1/4 cups all-purpose flour (for a flatter cookie, use 3 cups)

– 4 packages hot cocoa mix or 3/4 cup hot cocoa mix (not sugar free)

– 1 teaspoon salt

– 1 teaspoon baking soda

– 2 teaspoons baking powder

– 1 cup chocolate chips

– 1 cup Mallow Bits (mini marshmallows are not a suitable substitute)

– Gluten-free flour blend

– Flax egg or chia seed egg

– Coconut oil or vegan butter

Instructions

1-First, in a large bowl, beat the softened butter, sugar, and brown sugar with a mixer until light and fluffy this step is key for that soft, chewy center we all adore!

2-Add the eggs and vanilla extract; mix well to bind everything together and enhance the flavors.

3-In a separate bowl, combine the flour, hot cocoa mix, salt, baking soda, and baking powder for even blending.

4-Gradually beat the dry ingredients into the butter mixture until just blended, remembering not to overmix to keep your cookies tender.

5-Stir in the chocolate chips and Mallow Bits by hand for those delightful pockets of goodness.

6-Cover the dough and chill for at least 30 minutes (up to 24 hours) this is where the flavor deepens, folks!

7-Preheat oven to 350Β°F (175Β°C) and line baking sheets with silicone mats or parchment paper.

8-Drop rounded tablespoons (about 2 tablespoons) of dough 2 inches apart onto the prepared baking sheets.

9-Bake for 9 to 11 minutes, or until the edges are lightly browned, adapting as needed for your oven’s quirks.

10-Finally, cool cookies on baking sheets for 5 minutes, then transfer to wire racks to cool completely patience pays off for the best taste!
