Ingredients

– 2 tablespoons vegetable oil

– 1 pound boneless skinless chicken breasts, thinly sliced

– 1/4 cup plus 2 teaspoons cornstarch, divided use

– Salt and pepper to taste

– 1 cup broccoli florets

– 1/2 cup celery, thinly sliced

– 1 red bell pepper, cored, seeded, and diced

– 1 cup canned baby corn, drained and halved

– 1 1/2 teaspoons minced garlic

– 1/2 cup chicken broth

– 2 tablespoons soy sauce

– 2 tablespoons oyster sauce

– 2 teaspoons rice vinegar

– 1 teaspoon honey

– 2 teaspoons chili paste

Instructions

1-First, prepare all ingredients by slicing the chicken into bite-sized pieces and chopping the vegetables to uniform sizes.

2-Then, coat the chicken slices with 1/4 cup cornstarch in a resealable plastic bag for a nice crisp texture.

3-Heat the vegetable oil in a large pan over high heat and add the chicken in a single layer, seasoning with salt and pepper, then cook for 3-4 minutes per side until browned.

4-Remove the chicken and set it aside.

5-In the same pan, cook the broccoli, celery, and red bell pepper for 4-5 minutes until tender, adding salt and pepper to taste.

6-Stir in the baby corn and garlic, cooking for another 30 seconds to release their aroma.

7-Return the chicken to the pan and mix it with the veggies.

8-In a small bowl, whisk together the chicken broth, soy sauce, oyster sauce, rice vinegar, honey, chili paste, and the remaining 2 teaspoons cornstarch, then pour it over everything.

9-Bring to a simmer and cook for 1-2 minutes until the sauce thickens.

10-Serve hot, optionally over rice, for a complete meal that brings bold flavors to your table.

Notes

โ„๏ธ Freeze chicken breasts for 20-30 minutes before slicing to make cutting easier.
๐Ÿณ Cook chicken in batches to avoid overcrowding the pan and get a good sear.
๐ŸŒถ๏ธ Adjust the heat level by increasing or decreasing the chili paste according to your taste.
๐Ÿฅ• Feel free to substitute or add vegetables like carrots, mushrooms, zucchini, or eggplant.
๐Ÿฅœ Add nuts such as cashews or peanuts for extra texture, though they are not traditional in Hunan chicken.
