๐Ÿจ Experience the elegance of Tartufo, a classic Italian ice cream dessert combining creamy vanilla, amaretto-soaked cherries, and crunchy chocolate coating.
๐Ÿ’ This recipe offers a delightful mix of textures and flavors, perfect for entertaining or indulging in a sophisticated treat.

  • Total Time: 4 hours 34 minutes
  • Yield: 8 servings

Ingredients

– 5-6 chocolate waffle cones or chocolate cookies for the crumbs

– 8 scoops vanilla ice cream

– 8 maraschino cherries soaked in amaretto liqueur for at least 4 hours or overnight

– 12 ounces (approximately 340 grams) hot caramel sauce

– 1/3 cup (about 40 grams) chopped walnuts

Instructions

1-First, crush the 5-6 chocolate waffle cones or chocolate cookies into fine crumbs using a food processor or by placing them in a sealed bag and rolling over them with a pin. This gives you the perfect coating for your ice cream balls, adding a delightful crunch to each bite.

2-Next, scoop 8 balls of vanilla ice cream and place them on a parchment-lined baking sheet. For each ball, make a small hole in the center and insert one amaretto-soaked cherry, then smooth the surface to seal it in. This step is where the magic happens, infusing the dessert with that special almond flavor.

3-Then, roll each ice cream ball thoroughly in the chocolate crumbs until fully coated. Place them back on the baking sheet and freeze for at least 4 hours, or until firm, to set the shape and texture. This freezing time ensures the Italian Tartufo holds up when served, making it ideal for advance preparation.

4-Before serving, warm the 12 ounces of caramel sauce gently on the stove. Spoon some sauce onto plates, set each tartufo on top, drizzle more sauce over it, and sprinkle with the 1/3 cup of chopped walnuts. Serve immediately to enjoy the contrast of cold dessert and warm sauce, perhaps alongside other treats like our salted caramel brownies for a full spread.
