Instructions
1-Season 4 bone-in, skin-on chicken thighs with 1 teaspoon kosher salt and 1 teaspoon lemon pepper on both sides for flavorful results.
2-In a large skillet, melt 3 tablespoons of salted butter (divided) over medium heat and sear the chicken skin-side down until golden brown, about 5-7 minutes, then set it aside.
3-In the same skillet, melt the remaining butter and cook 3 cloves of minced garlic for 1-2 minutes until fragrant.
4-Add Β½ cup low-sodium chicken broth, 1 cup heavy cream (at room temperature), Β½ cup grated parmesan cheese, ΒΌ cup fresh lemon juice, and 1 teaspoon fresh thyme leaves; simmer until the mixture thickens.
5-Stir in 5 ounces of baby spinach until itβs wilted, then return the chicken to the skillet.
6-Transfer the skillet to the preheated oven and bake for 25 minutes or until the chicken reaches an internal temperature of 165-175Β°F.
7-Finally, garnish with lemon slices and thyme, and serve over rice, pasta, or mashed potatoes for a complete meal.
