Ingredients

– 2 (9-inch) round pie dough circles

– 1 egg

– 1 teaspoon water

– 3/4 cup lemon curd

– 1/2 cup marshmallow fluff

– 1 cup frozen whipped topping, thawed

– 1 teaspoon fresh lemon zest (optional)

– 1 teaspoon powdered sugar

– 2 (9-inch) round pie dough circles for shell base

– 1 egg for filling binder

– 3/4 cup lemon curd for flavor enhancer

Instructions

1-Thaw pie dough on the counter for about 10 minutes.

2-Preheat oven to 425ยฐF (220ยฐC).

3-Spray 8 metal cannoli forms with non-stick cooking spray.

4-Lightly flour a cutting board and cut four 4 1/2-inch circles from each dough circle.

5-Make egg wash by whisking egg with water.

6-Wrap each dough circle around a cannoli form, sealing edges with egg wash.

7-Place on parchment-lined baking sheet and freeze for 10 minutes.

8-Bake shells for 10-12 minutes until lightly golden.

9-Cool for 10 minutes, remove from forms carefully, and let cool completely before filling.

10-Stir lemon curd and marshmallow fluff together.

11-Fold in whipped topping and lemon zest if desired.

12-Spoon mixture into a bag and refrigerate until needed.

13-Pipe filling into cooled shells just before serving.

14-Sprinkle with powdered sugar before serving.
