Instructions
1-First: slice the 6 large carrots lengthwise in half and arrange them on a baking sheet in a single layer for even cooking.
2-Next: mix the 1Β½ tablespoons of melted olive oil and Β½ tablespoon of maple syrup in a small bowl, then brush this mixture evenly over the carrots to coat them well.
3-Sprinkle sea salt to taste and a pinch of cayenne pepper on top for a bit of heat, and if you like, place the 5 sprigs of fresh rosemary between the carrot halves.
4-Bake the carrots for 25 minutes, flipping them halfway through to help them roast evenly and develop that golden glaze.
5-Once theyβre tender, remove from the oven and garnish with chopped parsley before serving to add a fresh pop of color.
