– 1/2 cup canned black beans, drained and rinsed

– 1/2 cup corn (grilled or skillet-charred preferred; frozen, canned, or fresh can be sautéed in olive oil until browned)

– 1/2 cup chopped fresh cilantro

– 1 minced jalapeño (adjust to taste for the right level of heat)

– 3/4 cup mayonnaise

– 1/4 cup sour cream

– About 1 1/2 tablespoons taco seasoning (store-bought or homemade)

– 2 tablespoons fresh lime juice

Instructions

1-Gather and prepare all ingredients: Start with 1 (14-ounce) bag of coleslaw mix, then add 1/2 cup diced red bell pepper, 1/2 cup canned black beans (drained and rinsed), 1/2 cup corn (preferably grilled or charred), 1/2 cup chopped fresh cilantro, and 1 minced jalapeño.

2-In a separate small bowl, combine the dressing: Mix 3/4 cup mayonnaise, 1/4 cup sour cream, about 1 1/2 tablespoons taco seasoning, and 2 tablespoons fresh lime juice until smooth and creamy.

3-Pour the dressing over the slaw mixture and toss everything together thoroughly to ensure even coating.

4-Serve immediately or refrigerate and mix just before serving to keep it fresh and crunchy.
